So I thought I would post something simple. This is a Gujarati dish called Khichadi, it is simple yet so nutritious. Here is how I made it.
Rice – 1 cup basmati
Moong (split gram that looks )yellow – 1 cup plus a little more (Ghee optional)
Chopped onion, 1 – 2
Chopped tomatoes 1
Cumin seeds, Cinnamon stick, bay leaves, for tempering. Salt, chilly powder (or you could use green chilly – optional)
Masala – Blend these well in a mixie for later use.
1 teaspoon cumin seeds, 1-2 cloves, 3-4 whole black pepper, 1/2 teaspoon of fennel seeds, Garlic, ginger, coriander, dried coconut
Rice – Lentil Consistency
Cook rice with 2-3 drops of cooking oil to separate the grains while cooking. The moong dal has to be sort of overcooked.
In a vessel, put 5-6 tsp of oil, cumin seeds, 1-2 bay leaves, cinnamon stick and turmeric till they temper.
As you stir them, add chopped onion, garlic, and sauté till golden brown. Add the masala mix that we had prepared in the blender earlier.
Add chopped tomatoes, and saute some more. Add the cooked moong dal to this and mix well. Then add the rice, salt and mix. Put the gas in sim, cover it with a lid and let these blend. You can add some ghee or clarified butter at this point for some buttery taste. Keep mixing and let the aroma work in 3-5 mins and the khichdi is ready.
You can enjoy this with some papads and curds.
