Kebabs are usually made with mutton but here is a vegetarian version of that. It goes well as an accompaniment or even just with chai. These paneer kebabs are no different, they are crunchy and chewy, and it is quite easy to make. Here goes:
500 GMs of paneer / cottage cheese
A bunch of spinach leaves
1 carrot grated, 1 beetroot shredded
Breadcrumbs
For the masala (spices)
Coriander, green chillies, cumin seeds, ginger, garam masala
Cornflour for coating
Salt to taste
Steam the spinach, carrot, and beetroot till it becomes soft and slushy. Blend the coriander, green chillies, and cumin seeds. Mix these veggies and masala with the grated paneer. Add the breadcrumbs. Add salt and mix all this.
Make small parts of the dough, roll and flatten them a bit in the shape of kebabs. Coat these with some corn flour (you can use flour made out of rolled oats).
Fry these kebabs, you can enjoy them with sauce, mint chutney or with a veg biryani.
